CHICKEN MUGHALAI AND CHICKEN GHEE ROAST


CHICKEN MUGHLAI MASALA ( Recipe from Prestige Pressure cooker book ) and CHICKEN GHEE ROAST ( Using Chakrika pd )

CHICKEN MUGHLAI MASALA.

Ingredients:

1 kg. Chicken, 6 green chillies, 10 tsp chopped coriander leaves, 10 Kashmiri chillies, 4 cm. cinnamon, 2 masala cardamoms, 6 ordinary cardamoms, 6 cloves of garlic, 5 cloves, 8 tsp coriander seeds, 2 tsp cumin seeds, 4 cups cubed onion, 15 peppercorns,3/4 tsp turmeric pd. salt according to taste, 1 cup curds, 5 tbsp ghee, 2 tsp chopped ginger, 2 tsp chopped mint and coriander leaves..

Method.

Fry chicken pieces with 4 tbsp ghee till the colour changes..

Chop green chillies and coriander leaves

Grind all spices with half of the cubed onions

Heat ghee ( the same ghee in which the chicken pieces r fried ) fry the remaining onions .. when slight brown add the masala.

Now add the slightly beaten curds fry till ghee separates .

Add chicken , water , salt and pressure cook.
